MONDAY

Homemade Beef Rissoles with mashed potato and vegetables.

Whenever I make homemade rissoles I usually double the batch so I can pop some in the freezer to have ready as a meat 3 vegetable meal or hamburgers

TUESDAY

Simple Oven Baked Lamb Dinner

Serve with steamed greens and butter, salad, caramelised onion quinoa or cauliflower purée… Whatever you fancy!

WEDNESDAY

Homemade hamburgers, from left over rissoles.

THURSDAY

Cottage Pie – I made this recipe with sweet potato as a healthy alternative.

Chicken Noodle Soup

Chicken noodle soup is a wonderful winter warmer recipe, especially good for when you are feeling under the weather.

SATURDAY

Frozen Fish portions with pasta and vegetables.

SUNDAY

Bolognese from freezer on toast.

BAKING

Healthy Coconut Lemon Balls

Sometimes it’s hard to find something different to add to the kids lunch boxes, they have their usual sandwich, a piece of fruit, vegetables sticks and some baking, but there are days where they want something a little more and I am loving the ‘balls‘ that I have been making lately.  Not only are they great to have on hand as a quick snack, they have been a great filler to the kids lunchbox too.

Apple and Oat Muffins

These muffins are delicious and reasonably healthy! Filled with wholemeal flour, oats and apples, you could even add in some sultanas if you wanted.  I was really pleased with the amount of batter this recipe made, 12 regular muffins plus 12 mini muffins, enough for the kids to have some for afternoon tea and freeze for school lunch boxes.
