SNAP! I’m doing chicken, leek & blue cheese pie tonight 😉 I think the cooler weather just gets me in a pie making mood. Love the mexican layered dip too, yum!

During cooler weather, VERY early in the morning or after the sun has gone down is when I make meals the require oven cooking. I have become handy with the slow cooker and even hubby, who HATED it, has become a convert. It uses less energy (money), less effort and it’s so lovely to have a meal ready at the end of day surrounded by a clean kitchen.
It’s only 26*c at the moment so I did Greek theme: Greek salad, Spanikopita, Dolmathes with Avgelemono Sauce. Salad is a jiff to make. Spanikopita were made ahead then baked out of the freezer. Dolmathes were made ahead already cooked so just needed warming in the micro. Avgelemono Sauce was fresh. From start to finish (freezer to finish for some items) in about 1 hour. Left overs? Sorry, none 🙂
