Quick and easy Creamy Chorizo Pasta recipe

Loads of people asked me for this recipe after I shared made it recently on my Instagram stories. It is so simple to make, and ridiculously yummy! I really enjoy sharing my dinners on my Instagram stories – I should do a live video one day.

This recipe can be thrown together in about 20 minutes. You simply brown the chorizo, add in the onion, then stir in the other ingredients. Whilst cooking up the creamy sauce I pop the pasta on to cook.

It’s then as easy as pouring the creamy chorizo sauce over the pasta and finishing off with a sprinkle of parmesan cheese – yum yum.

Ingredients
  

  • 250 g fettuccine
  • 2 chorizos sliced
  • 1 brown onion diced
  • 3 garlic cloves minced
  • 400 g can diced tomatoes
  • 2 cups baby spinach
  • 1/2 cup thickened cream
  • salt and pepper to season
  • parmesan cheese grated, to serve

Method
 

  1. Cook 250 g fettuccine following packet directions. Drain.
  2. Meanwhile, heat a large frying pan over medium-high heat.
  3. Add 2 chorizos. Cook for 3-5 minutes or until they start to brown.
  4. Add 1 brown onion to pan. Cook for 5 minutes or until browned.
  5. Stir in 3 garlic cloves, 400 g can diced tomatoes, 2 cups baby spinach and 1/2 cup thickened cream. Mix and bring to the boil.
  6. Season with salt and pepper.
  7. Reduce heat to low and simmer for 5 minutes.
  8. Serve over fettuccine with a sprinkle of grated parmesan cheese.

Thank you so much for this recipe! What a godsend. I made it last night whilst nursing a sick husband and making banana pancakes with my son. It was that easy! and although the patient was hesitant to have it, it wasn’t spicy at all. This will definitely become a staple in our kitchen.

Made this last night. I swapped the pasta for zucchini pasta as I follow Paleo and don’t eat pasta. It was delicious. Had left overs for lunch. Will be making it again.

Whipped this up tonight for hubby’s birthday dinner, added 1cup of diced bbq chicken in the last minutes just to heat through…
Will definitely make it again, I reckon even the 10yr old budding chef could do it

Absolutely delicious. Daughter cooked the sauce earlier in the arvo ans i cooked the pasta when i got home. Certainly will be having it again

This is one of my favourite weeknight staples. Always a hit & so easy.

However, this time I’ve gone to make it, I’ve noticed the recipe seems to be missing from this page! I’m hoping it’s a glitch as I don’t have a copy myself. Have you had to take it down?
