There’s nothing like a delicious soup to warm you up on a chilly night! These are some of my family’s favourites and the most convenient way to freeze them.
When the days get shorter and the nights become colder, it’s the perfect time to serve up soup for dinner. The whole family will enjoy these warming meals. Add some crusty bread to encourage any reluctant kids as they will love the novelty of ‘dunking’ at the dinner table!
One of my favourite things about soup recipes is how easily they lend themselves to freezing. This means I can make a double batch and freeze leftovers for another night. While I used to freeze a large portion in a big container, this wasn’t always ideal because it took a long time to thaw and sometimes I only needed to feed two or three family members.
Now, I use Souper Cubes to freeze my soup. These innovative, stackable food freezing trays are a game changer! For soups, I like to use the Souper Cube – Two Cup for adult portions because it’s a really good serving size. For younger children, the One-Cup would be a good portion size. You don’t have to be vegan to enjoy this soup! Packed with flavour, it makes a great option for lunch as well as dinner.
RED COCONUT CURRY LENTIL AND SWEET POTATO SOUP
This vegetarian option is quick to make so it’s perfect for those nights when you’re getting home later and the kids are hungry. It’s a great option for vegetarians or if you like to have some meat-free meals during the week.
HEARTY MEATBALL SOUP
If your family loves bolognaise, this soup will be a hit!
CREAMY ROAST PUMPKIN SOUP
Welcome the cooler months with a classic winter favourite. There’s a reason that this recipe is is a well-loved staple in many homes across the country – it’s perfectly delicious! It’s worth whipping up a double batch of this recipe and using your souper cubes to freeze some for another night.
