- 3 cups Rice Bubbles
- 200g white chocolate
- 1 tbsp coconut oil
- Mini Easter eggs
Instructions
- In a bowl: Add rice bubbles
- Prepare the mixture: Melt the white chocolate in a heatproof bowl over simmering water or in the microwave in 20-second intervals, stirring until smooth.
- Combine: Stir the melted chocolate into the Rice Bubbles until evenly coated.
- Shape the nests: Spoon the mixture into a mini muffin tray or cupcake liners, pressing gently in the center to form a nest shape.
- Decorate: While still soft, place mini Easter eggs in the center of each nest.
- Set: Allow them to cool at room temperature or place them in the fridge for 15–20 minutes until firm.
- Enjoy! Once set, remove from the tray and serve!
