Ingredients

- 3 cups rice bubbles
- 2 cups coconut
- 1 cup sultanas
- 100g halved red glacé cherries
- 1/2 cup blanched almonds, roasted, chopped
- 3/4 cup sweetened condensed milk
- 185g Copha, melted
- 100g white chocolate melts, melted
Instructions
- Line a 18cm x 28cm lamington pan with baking paper.
- Combine all ingredients into a large bowl and mix well.
- Press mixture evenly into
baking tray. - Refrigerate overnight or until set.
- Cut into slices to serve.
- Store covered in
fridge
