Jam and Nut Muffins

Easy to make, delicious muffins perfect for the lunchbox

Ingredients

  • 2 1/2 cups SR Flour, sifted
  • 1/2 cup caster sugar
  • 90g butter, melted
  • 1/2 cup chopped nuts (your choice)
  • 1 egg
  • 1 cup cream
  • 1/4 cup milk
  • 1/2 cup jam

Instructions

  1. Preheat oven to 180C
  2. Grease 12 hole muffin tin
  3. Add flour and caster sugar to bowl, create well
  4. Stir in butter, egg, cream, milk and nuts
  5. Half fill each hole with mixture
  6. Create small wells in each
  7. Spoon teaspoon of jam into center of mixture
  8. Top to remaining mixture
  9. Cook for approximately 20 min
