Although White Christmas is an Australian tradition, I've actually never made it. My nan used to make it all the time, along with her rum balls but I didn't have her recipe. I found this one amongst all mum's old recipes that I had and did a test run of it a few weeks ago, and I must say that I am super impressed with this light and fluffy and very delicious Christmas dessert.
I think I had just forgotten how yummy White Christmas really is, and it looks so beautiful all set up on a serving dish too. It's not overly sweet and I like the additional crunch of the roasted almonds. It also makes a great 'bring a plate' alternative over the festive season.

Ingredients
3 cups rice bubbles
2 cups coconut
1 cup sultanas
100g halved red glacé cherries
1/2 cup blanched almonds, roasted, chopped
3/4 cup sweetened condensed milk
185g Copha, melted
100g white chocolate melts, melted
Instructions
Line a 18cm x 28cm lamington pan with baking paper.
Combine all ingredients into a large bowl and mix well.
