I've been making a few bite sized balls lately for the kids lunch boxes, they are a great healthy snack. My Miss 12 wanted something a little different than the apricot balls I have been making lately. Looking through the pantry I had some muesli that I wanted to use up which added a nice little crunch to these balls.
I used apricots, but you could replace these with dried apples or dates, this recipe is so versatile.
Place muesli, apricots, honey and warm, melted butter in a food processor. Process for 2 to 3 minutes or until well combined.
Place coconut in a shallow dish. Roll tablespoons of muesli mixture into balls. Coat balls in coconut. Set aside to cool for 15 minutes before serving.
