Coconut Chocolate Brownies – Mix it up with these delicious coconut flavoured chocolate treats which will have you coming back for more!
These brownies are absolutely delicious, and won’t last long at all! These are perfect for lunchboxes or afternoon treats or even just treating yourself with a cuppa! The recipe makes 24 pieces however, if you want to make a double batch you can cut the brownies into snack size squares and freeze the individual portions.

Description
Coconut Chocolate Brownies – Mix it up with these delicious coconut flavoured chocolate treats which will have you coming back for more!
Ingredients

- 80g butter, melted
- 1 cup caster sugar
- 1 teaspoon vanilla essence
- 2 eggs
- 1/4 cup self raising flour
- 3 tablespoons cocoa, sifted
- 1/3 cup desiccated coconut
Instructions
- Preheat oven to 175C, fan forced
- Grease or line a 30 x 20cm slice tin with baking paper
- In a large bowl, add butter, sugar, vanilla and eggs, mix to combine
- Add flour, cocoa and coconut, mix to combine
- Press mixture into prepared slice tin
- Bake slice for 20 minutes or until just cooked through
- Rest in tin for 5 minutes before transferring to a wire rack to completely cool
- Sprinkle with icing sugar to serve
Notes
Cut into snack size squares to freeze individual portions.
