Slow cooked Silverside

I love this silverside, fuss free, tender and is very simple to put together.  Tastes so good with some mashed potato, steamed vegetables and mustard sauce!

Ingredients
  1. 1 Silverside
  2. 1 cup vinegar
  3. 2 bay leaves
  4. 3/4 cup brown sugar
Mustard Sauce
  1. 50g butter
  2. 2 tablespoons plain flour
  3. 2 cups milk
  4. 2 teaspoons wholegrain mustard
  5. 2 tablespoons parsley, chopped
Instructions
  1. Place silverside in slow cooker
  2. Pour in vinegar, add bayleaves and sprinkle sugar over silverside.
  3. Use the kettle to pour in enough water to cover silverside.
  4. Cook on low for 8 hours
Mustard Sauce
  1. Melt butter in a saucepan over medium heat.
  2. Add flour, cook stirring for 1 minute, remove from heat.
  3. Slowly stir in the milk until the mixture is well combined.
  4. Return to heat, cook stirring for a further 3-4 minutes or until the mixture boils and thickens, remove from heat.
  5. Stir through mustard and parsley, serve.

Just because it’s easier I have started making my Mustard and Parsley sauce in the thermomix.  

Thermomix Mustard and Parsley Sauce

Ingredients
  1. 50g butter
  2. 15g plain flour
  3. 500g milk
  4. 2 teaspoons wholegrain mustard
  5. 2 tablespoons parsley, chopped
  6. salt to taste
Instructions
  1. Place butter, flour, milk and mustard into Thermomix jug, cook 7 minutes / 90C / speed 4.
  2. Add salt to taste.
  3. Add in chopped parsley, mix 4 seconds / speed 2.
  4. Serve immediatley, with silverside.

    Its like you read my mind… I was just looking for a slow cooker recipe for silverside / corned beef as I got a slow cooker for my birthday last week!!

    Can I put the beef in for longer than 6-8 hours or will it ruin the meat?

    make sure you use brown sugar and brown vinegar. Also adding golden syrup (instead of or along with the brown sugar) and half an orange works beautifully.ReplyCancel
