Homemade Sausage Rolls

Hubby made a double batch of these delicious homemade sausage rolls, a double batched was enough to serve 5 for dinner with salad, then enough left over for school lunch boxes

Homemade Sausage Rolls

Ingredients
  • 250g sausage mince
  • 250g beef mince
  • 1 onion, finely diced
  • 1 carrot, shredded
  • 1/2 cup breadcrumbs
  • 1 tlb tomato paste
  • 1 tlb BBQ sauce
  • 2 eggs
  • 3 sheets puff pastry, thawed
Instructions
  1. Preheat oven to 180C
  2. Cut each pastry sheet in half
  3. Combine sausage mince, beef, onion, carrot, breadcrumbs, paste, sauce and 1 egg into a bowl
  4. Use hands to combine all ingredients together
  5. Divide mixture into six
  6. Roll each portion into a long sausage and place onto each onto a pastry half
  7. Fold pastry sheet tightly over to seal
  8. Cut each long roll into 3
  9. Beat remaining egg in a small bowl, brush egg over pastry
  10. Bake in oven for 20-25 minutes
