Chicken Cabonara Pasta Bake

Ingredients
  • 2 cups pasta
  • 2 teaspoons olive oil
  • 1 tlb garlic mince
  • 4 pieces shortuct bacon
  • 3 spring onions, thinly sliced
  • 4 eggs, lightly beaten
  • 300ml reduced-fat thickened cooking cream
  • ½ cup finely grated parmesan cheese
  • ½ cup tasty cheese, grated
  • 1 BBQ Chicken, shredded

Instructions
  1. Preheat oven to 180°C
  2. Cook pasta in a large saucepan of boiling, following packet directions
  3. Drain and return to saucepan
  4. Heat oil in a frying pan over medium-high heat
  5. Add bacon. Cook, stirring, for 3 min or until bacon is nearly to your liking
  6. Add garlic and spring onion cook, stirring for 1 min
  7. In a bowl whisk together eggs, cream, parmesan cheese, salt and pepper to taste
  8. Add egg mixture and chicken to pasta, toss to combine
  9. Spoon into a prepared dish and sprinkle with tasty cheese
  10. Bake for 20-30 until browned.

    this looks soooo yum! I’ve already printed this ready for t-ball training night when we get home late and there is no time to cook – I can cook before we go and set the timer on the oven to turn off and it will still be nice and warm when we get home!

    This should freeze okay, shouldn’t it?

    One thing I’d change with this recipe is the vegetable content. Needs a lot more veggies which would be easy to include. I add chopped veggies to the pasta water to save time and washing up.
