1st layer ontop of lasange sheet
top with remaining carbonara and cheese
Chicken and Spinach Lasange
- 1 cup grated tasty cheese
- ¼ cup grated parmesan cheese
- 2 teaspoons olive oil
- 1 medium brown onion, finely chopped
- 500g chicken mince
- 2 cups fresh spinach
- 400g can crushed tomatoes with basil flavours
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 4 fresh lasagne sheets (I use Latina)
- 1 425g Latina carbonara sauce
- Salad leaves, to serve
- Preheat oven to 160C
- Have ready a large 6 cup rectangle casserole dish, greased
- Combine cheeses in a bowl
- Heat oil in a frying pan
- Cook onion, stirring until softened
- Add mince, cook break up with wooden spoon, stirring occasionally until browned
- Add spinach, tomato, tomato paste and oregano
- Cook for 5 minutes or until slightly thickened
- Spoon a tablespoon of carbonara sauce over the base of casserole dish, spread
- Place 1 lasange sheet, in dish
- Spoon one-third chicken mixture into prepared dish. Top with one-quarter carbonara sauce, one-quarter cheese mixture and then another lasagne sheet
- Repeat with chicken mixture, cheese, and lasagne sheet to form 3 layers
- Spoon last quarter of carbonara sauce onto last lasange sheet, sprinkle with remaining cheese
- Bake for 30 minutes until golden
