Chicken and Spinach Lasagne

  • 1 cup grated tasty cheese
  • ¼ cup grated parmesan cheese
  • 2 teaspoons olive oil
  • 1 medium brown onion, finely chopped
  • 500g chicken mince
  • 2 cups fresh spinach
  • 400g can crushed tomatoes with basil flavours
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 4 fresh lasagne sheets (I use Latina)
  • 1 425g Latina carbonara sauce
  • Salad leaves, to serve


  1. Preheat oven to 160C
  2. Have ready a large 6 cup rectangle casserole dish, greased
  3. Combine cheeses in a bowl
  4. Heat oil in a frying pan
  5. Cook onion, stirring until softened
  6. Add mince, cook break up with wooden spoon, stirring occasionally until browned
  7. Add spinach, tomato, tomato paste and oregano
  8. Cook for 5 minutes or until slightly thickened
  9. Spoon a tablespoon of carbonara sauce over the base of casserole dish, spread
  10. Place 1 lasange sheet, in dish
  11. Spoon one-third chicken mixture into prepared dish. Top with one-quarter carbonara sauce, one-quarter cheese mixture and then another lasagne sheet
  12. Repeat with chicken mixture, cheese, and lasagne sheet to form 3 layers
  13. Spoon last quarter of carbonara sauce onto last lasange sheet, sprinkle with remaining cheese
  14. Bake for 30 minutes until golden
