Banana Pancakes

Banana Pancakes recipe that is quick and easy to make and is a great way to use up overripe bananas.

My youngest (Miss 9) went on her first school camp this week.  I was so nervous about her going, being my baby and all. However I was also worried about her being cold, did I pack her enough clothes and blankets? I woke really early on Wednesday morning as I couldn’t sleep, I had a bowl full of overripe bananas so I thought I’d make her some yummy banana pancakes before she goes off to camp.  Usually I would never have the time or desire to make pancakes on a school morning, I was just up early worried about her going away for 2 nights… needless to say she came home yesterday happy and with so many stories.

These pancakes were easy to make, light, fluffy and delicious.

Ingredients

Scale
  • 1 overripe banana, peeled
  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 50g butter, melted
  • 1 1/2 cups self raising flour, sifted

Instructions

  1. Place banana into an electric mixing bowl, with whisk attachment on medium-high mash banana until smooth
  2. Add in eggs, milk and vanilla, mix until well combined
  3. Pour melted butter into bowl along with the flour, stir until blended together, do not over mix.
  4. Heat frying pan on medium, add a teaspoon of butter to pan, swirl to melt
  5. Place large spoonfuls of batter onto pan (or use a squeeze and pour cup), cook until a you see holes forming on top and golden underneath, flip. Once both sides are golden and pancake is puffed remove from heat. Repeat to use up all batter
  6. Serve with maple syrup
