As the weather is now warming up I don’t use my slow cooker as often.  I like cooking in the slowcooker as I double quantities for left-overs I keep in the freezer for those busy nights after sport.  However, most meals I cook in the slowcooker are casseroles.  Frost Bite is a cookbook filled with easy, freezer friendly, family meals, giving more variety in meals to our busy weeknights.  I’m looking forward to trying Chicken, Leek & Thyme Risotto and Chewy Coconut Brownies ~ Kat – The Organised Housewife.

Here is this weeks meal plan:

Monday – Beef, broccolini and rice noodle stir fry

Tuesday – Zucchini and cherry tomato tart from FROST BITE

Wednesday – Penne pasta with meatballs made from Italian sausages, cooked in a bottled tomato pasta sauce

Thursday – Pesto chicken with grilled vegetables (from Women’s Weekly – chicken thighs are covered in store-bought sun-dried tomato pesto then barbequed) plus roast potatoes

Friday – Chilli con carne with rice, from FROST BITE (in the freezer)

Saturday – Homemade pizzas: Margarita or Hawaiian for my daughters; bacon, rosemary and chilli flakes for the grown-ups.

Sunday – Sausage sizzle and salads

Baking– Mars bar and marshmallow slice from FROST BITE for a kids’ party &  Carrot and Walnut cake

Zucchini and cherry tomato tarts (FROST BITE) – the picture shows individual tarts (great for entertaining) but I make one large tart in a pie dish as it’s easier for a family meal  (FROST BITE)
