Meal Planning: Corn and Chickpea Fritters

So much has been happening this past week.  I have been overwhelmed by reader emails, thankyou to each and everyone of you for your kind words, I am so happy to be inspiring and helping so many wonderful people.  The facebook page has been be a buzz of activity lately (now with 4,500 + likers) with everybody enjoying the daily tasks I have been adding.  So much so that I have decided to create a weekly newsletter and send you a weekly task list to your inbox.  This weekly task list will be similar each week, eg clean your floors, wash the bed sheets, however it will also include tasks such as clean your fans, clean the fridge, organise the bathroom cupboard – tasks you wouldn’t complete every week and may forget to do.

I have been trying to find budget recipes as this week I was trying to keep the cost of our meals low.  Do you have any budget recipes you can share with me?

I have come across the most amazing recipe book.  Vegie smugglers by Wendy Blume.  I have only made 1 recipe from it so far, but it was so delicious that I am going to ‘try’ and dedicate myself to cooking at least 1 meal a week from this cookbook.  There are so many things I love about this cookbook:

Vegie Smugglers

  • Do you know you are going to be super busy all day tomorrow and won’t be in the mood to cook dinner?  This book has recipes that you cook the night before and it tells you how to reheat them.
  • It has a section you can rate the recipe and write a comment.  Perfect cause I know there are times I make a recipe don’t like it but nevertheles forgotten and made it again….mummy brain, i’m so forgetful.
  • It smuggles vegeies into the kids meals…love it
  • Freezer friendly recipes
  • It gives you tips on how to make a meal the kids will enjoy into a meal for the adults to enjoy too.
  • Wendy your this book is just BRILLIANT!

 

Here is this weeks meal plan:

Monday –  Farm House Rissoles with potato and veg ❗ ❗ ❗

Tuesday – Chicken curry with pasta

Wednesday – easy dinner from the pantry

Thursday Vegie Smugglers – Salmon Pie (pictured left) I smuggled – Salmon, potato, brocolli, corn and peas.  The kids enjoyed helping decorate each of their pies. ❗ ❗ ❗

Friday – Hmm, we shouted ourselves a pizza

Saturday – Nacho’s

Sunday – Roast Beef, potato and vegies

Baking – Choc chip cookies and Rock cakes
