{Meal Plan} Lisa’s sweet potato salad

I would like to say a big thank you to Lisa for sharing her families weekly meal while I am away in Kuala Lumpur.  However I am sure that my hubby is cooking beautiful meals for my family 😉

Please remember that I post meal plans from my week that just passed, which gives me the opportunity to cook the recipe before I recommend it and to take photos.  So this is why Christmas Day is not included in the meal plan below 🙂  However the salads below look perfect for the table on Christmas Day!

Hi, this is Lisa from the Life as we know it blog, and this weeks menu plan comes direct from my kitchen.  Two things are exciting me about this week’s menu plan…1. My hubby has finally fixed the switch on my oven so I can bake something; and 2. I’m finally going to create some meals based on the delicious recipes I’ve been pinning on Pinterest!

We cook a lot of barbeques during summer, so most recipes I’m on the hunt for are accompaniments to meat. Here’s what the Warren family will be devouring this week…

This weeks meal plan… by Lisa!

Monday – Homemade hamburgers

Tuesday – Steak with Roma tomato and basil salad

Wednesday – Grilled chicken breast with Three pea and potato salad

Thursday – Pumpkin and ricotta lasagne

Friday – Spaghetti with sauteed chicken and grape tomatoes

Saturday – Fresh prawns served with Lisa’s sweet potato salad (recipe below)

Sunday brunch – French toast kebabs

Sunday – Dinner with family, so no cooking…yay!

Lisa’s Sweet Potato Salad

You will need:
3 cups chopped sweet potato
1 cup Bulgarian fetta, crumbled
1/2 spanish onion, sliced
1 good handful of baby spinach
1/2 cup toasted pinenuts

  1. Roast sweet potato until tender and pieces are nicely caramelised. Set aside to cool. You could do this step the night before, or use leftovers from your roast dinner.
  2. Once sweet potato is cooled, place all ingredients into your salad bowl and gently toss.
  3. Eat! It’s that simple, and no dressing required. Delicious.
