Hi There,
I've been lurking in your blog for a few months now. :)
I love your site and get a lot out of your posts.
Cutting up the fruit and vegetables is something that I try and do as well .. as soon as I get home from the grocery store.
I have those Rubbermaid tubs that are made for the fruit and veg too and find that my produce last quite a bit longer in them because as you say in your video .. they are seperated from any moisture thereby, extending their life.

So, keep up the fantastic work that you do on this site. Even though I may not always comment, I am reading. :)

((hugs))

I also wondered if anyone else found it reduced the shelf-life of the vegies and fruit by cutting them? particularly soft fruit such as watermelon.
I think storing precut vegies in water causes nutrient leaching out of the veg into the water (like boiling instead of steaming) but many nutrients are reduced by cooking, long-storage, UV, etc but you would have to research the individual vitamin on wiki or something?
Certainly the most nutritious food is that which is gladly eaten and made from the freshest, intensive-farmed (if u can home/organic grown) rather than extensive-farmed trace element-deprived soils.
The best thing about this is the convenience - and if we reach for junkfood instead of slightly reduced nutrient loading fruit n veg we are not getting the nutrients anyway..
But can i encourage everyone to compost their food scraps, please?

Hi Katrina, great video, you got me inspired to this months ago when I first discovered your website. My only concern is one brought up by my mum; How many of the vitamins and nutrients are lost when pre-cutting the produce? I don't know myself, and thought it might be something you know, or could look into. I still think it's worth it, simply because I'm more likely to use the produce when it's pre-cut and I certainly won't get any nutrients 3 weeks later when I'm throwing rank vegies in the bin!
