    thurs 15 may honey mustard chicken & rice

    fri 16 may macadamia crusted barramundi w/ mango salsa & chips

    sat 17 may stir fry beef with cashew nuts

  • We’re eating our way through the freezer at the moment – so meal planning is rather haphazard until it’s all gone, then we will just buy a week’s worth of meat at a time rather than stocking up in bulk – after fish transferring to eye fillet, rendering the steak inedible, we have to work on our protein storage methods!

    Tonight is hamburgers, tomorrow night will be spag bol. The following night will be left over bol for the kids,l chops for the man of the house, and spicy sausages for me. Thursday may involve takeaway of some kind, Friday has chicken written all over it, and the weekend is up for debate.ReplyCancel

      Every now and then I put “Freezer Finds” on the menu – basically it means that whatever I find – we eat. It’s often leftover bits and bobs – 3 sausage rolls, the odd frozen pizza, some crumbed chicken – whatever. I think it’s important to know that it is perfectly OK that we don’t all eat the exact same thing. I just cook up whatever’s there and first in best dressed !ReplyCancel

    Hello, i am absolutely hopeless at meal planning…..generally ends in tears cause I’m not a good cook either. Do you have meal plans that I can use and rotate? We generally eat the same thing as my kids are painful eaters!!! Also, do you have a cleaning routine that I can use?     I don’t have photos – not that tech savvy yet to know how to get them from the camera and into the computer…but someone else can cook it and take a photo if they like!
    I have a super easy recipe for left over chicken – whether it be left over bbq chook or from a roast. It helps make a little chicken go a long way and of course you can use fresh vegetables if you prefer – I just tend to use frozen as this is my go-to meal when I don’t feel like putting in that much of an effort to feed myself…
    I usually serve it with rice so put the rice on to cook and then do the chicken.
    Shred the chicken into a saucepan, add in a crushed chicken stock cube or equivalent, a tin of apricot nectar(because it’s more apricot-y than just juice), some canned apricots (not the ones in syrup generally as they can make it too sweet) or a cup of dried diced apricots, or you can put in dried apricot halves if you like it chunkier. Add a packet of (salt reduced) dried French onion soup mix and some mixed frozen vegies – we like the celery, peas, corn, capsicum mix. Cook on medium heat, stirring it fairly regularly to stop it sticking to the bottom and cook till the soup mix thickens up the nectar and the vegies are cooked to your liking.ReplyCancel
