My kiddies are so sweet, each year for Mothers Day they buy me the same gift, new slippers and winter PJs. Perfect cause its starting to get cold around that time.

This is going to be a hard mothers day, the first without my mum. I nearly didn’t put up a mothers day post, I really don’t want to celebrate it at all. But as my friends keep telling me ‘my kids deserve to celebrate me’, yes they do but I am still going to be sad.

I made this cute printable for a friend last week, I love reading the funny answers they come up with. Download for free in my shop. I have added a version in the shop for mum and mummy.

Easter Choc Ripple Cake

I made a chocolate ripple cake for our guests at Christmas, it was easy to put together and so very tasty. So I thought I’d make an Easter version for an Easter gathering we were having. You will need overnight (or 6 hours) to let it sit, but it should only take you 10 minutes to put together, than a further 10 min the next day to decorate. A slice no more than 1.5-2cm is ample anymore and you’ll get a cream headache. There would be enough to serve 10-12.

Easter Choc Ripple Cake

Make cream mixture then spread a tablespoon over one biscuit

Repeat 4 times finishing with a choc biscuit

Place biscuits stack onto a platter, that has been spread with a few tablespoons of cream. This will help the biscuits stand upright

Cover biscuit stacks with remaining cream, refrigerate overnight and decorating the following day

The biscuits are now a soft texture, cake like even and easy to slice through

Easter Choc Ripple Cake

Serves: 12

Ingredients

500ml thickened cream
1 tsp caster sugar
1 tsp vanilla essence
250g packet Arnott’s Choc Ripple biscuits
Cadbury Flake and Easter eggs to decorate

Instructions

Use an electric mixture to beat the cream, caster sugar and vanilla essence until soft peaks have formed
Spread 3 tablespoons of the cream mixture over a platter to form a base for the biscuit stacks.
Spread one biscuit with one tablespoon of cream mixture, repeat 4 times finishing with a biscuit on top (5 biscuits in stack)
Place biscuit stack, edges side down onto platter
Repeat with remaining biscuits
Spread the remaining cream over biscuit stacks, covering completely.
Place in fridge overnight or minimum of 6 hours to set
Decorate with crushed flake and easter eggs

A fun new easter tradition – sprinkle with jellybeans and lollypops will grow

We don’t have too many easter traditions, but the ones we do have are so much fun. You can read about them here, my favourite is the footprints in the lawn.

One tradition that I would love to start with my niece and some neighbourhood kids is one I saw on pinterest last year (sorry unsure of original source). It’s not a healthy alternative, but just something different than chocolate.

Sprinkle the lawn with jellybeans

And in the morning lollipops will have grown

Isn’t it sweet!

Easter Rice Bubble Nests

I found these Easter Smarties at The Reject Shop recently, I thought the coloured eggs would look really cute nestled into a rice bubble nest. I’ve made these prior to easter so I can share them with you, but I think it could be a lovely treat to have over easter.

You could decorate the nests with anything really:

Mini Easter Eggs
Chocolate Easter Egg
Strawberry
Dried Apricot, to look like a little tart
Caramel

Easter Rice Bubble Nests

Ingredients

200g white chocolate melts
2 cups Rice Bubbles
Smarties Easter Eggs
Spray oil, for greasing tin

Instructions

Lightly grease a 24 hole mini muffin tin
Place rice bubbles into large bowl
Microwave the chocolate on medium for 2 minutes, stirring every 30 seconds.
Ensure that the chocolate is completely melted
Pour the chocolate onto the rice bubbles and stir until all combined
Spoon heaped tablespoon of mixture into muffin tin
Working fast as the mixture will start to set, mould the mixture around the hole to form a basket shape
Add eggs to decorate

Notes

If your baskets have started to harden up, you can melt a little more chocolate and dip the eggs into the chocolate and place in basket. Dipping the chocolate will keep the eggs still in the basket.

Easter Decorating

Each year at easter we decorate one hutch with little easter ornaments, but craft projects the girls and I make in the lead up to easter. We don’t make a huge fuss over easter like we do Christmas, but we find it fun to have a little display.

Last year the girls made this easter egg garland using paint chips, very cute
