<p style="text-align: center;">This is going to be a hard mothers day, the first without my mum.  I nearly didn&#8217;t put up a mothers day post, I really don&#8217;t want to celebrate it at all.  But as my friends keep telling me &#8216;my kids deserve to celebrate me&#8217;, yes they do but I am still going to be sad.</p>

				<content:encoded><![CDATA[<p style="text-align: center;">I made a chocolate ripple cake for our guests at Christmas, it was easy to put together and so very tasty.  So I thought I&#8217;d make an Easter version for an Easter gathering we were having.  You will need overnight (or 6 hours) to let it sit, but it should only take you 10 minutes to put together, than a further 10 min the next day to decorate.  A slice no more than 1.5-2cm is ample anymore and you&#8217;ll get a cream headache. There would be enough to serve 10-12.</p>

<p>I found these Easter Smarties at The Reject Shop recently, I thought the coloured eggs would look really cute nestled into a rice bubble nest.  I&#8217;ve made these prior to easter so I can share them with you, but I think it could be a lovely treat to have over easter.</p>
<p>You could decorate the nests with anything really:</p>
<ul>
<li><span style="line-height: 13px;">Mini Easter Eggs</span></li>
<li>Chocolate Easter Egg</li>
<li>Strawberry</li>
<li>Dried Apricot, to look like a little tart</li>
<li>Caramel</li>
</ul>

<li class="ingredient" itemprop="ingredients">2 cups Rice Bubbles</li>
<li class="ingredient" itemprop="ingredients">Smarties Easter Eggs</li>
<li class="ingredient" itemprop="ingredients">Spray oil, for greasing tin</li>

<ol>
<li class="instruction" itemprop="recipeInstructions">Lightly grease a 24 hole mini muffin tin</li>
<li class="instruction" itemprop="recipeInstructions">Place rice bubbles into large bowl</li>
<li class="instruction" itemprop="recipeInstructions">Microwave the chocolate on medium for 2 minutes, stirring every 30 seconds.</li>
<li class="instruction" itemprop="recipeInstructions">Ensure that the chocolate is completely melted</li>
<li class="instruction" itemprop="recipeInstructions">Pour the chocolate onto the rice bubbles and stir until all combined</li>
<li class="instruction" itemprop="recipeInstructions">Spoon heaped tablespoon of mixture into muffin tin</li>
<li class="instruction" itemprop="recipeInstructions">Working fast as the mixture will start to set, mould the mixture around the hole to form a basket shape</li>
<li class="instruction" itemprop="recipeInstructions">Add eggs to decorate</li>
